Propylene glycol alginate (PGA)
PGA is one novel food additive made of alginic acid through intensive processing which is extracted from natural seaweed. It is white or light yellow powder, no any flavor or a little fragrance. It is soluble in water and form gelling solution. It is insoluble in organic solvent ethanol.
Besides its thickening property, PGA has function of surface active agent, used as emulsifier and bubble stabilizer. It has stabilizing function for greasy colloid and it is acid resistant. Because PGA is nonionic compound, it is stable for some metal ion, which can not make solidification and separate out.
